Vineyards and Harvest

The grapes were sourced from our organically certified estate Kyli's Roussanne Vineyard and from the low-yield, Shadowbrook and Lakeview Vineyards in the Sanel Valley of Mendocino County.  The roussanne and viognier blocks were harvested by hand from October 15 to October 20, following a long, cool growing season.  The fruit was intensely perfumed, and the sugar/acid balance was ideal.

Winemaking and Cooperage

The grapes were whole-cluster pressed.  The juice was settled, racked and fermented (no malolactic fermentation).  The wine remained sur lie for three months with bi-monthly batonnage with 60% in small stainless barrels and 40% in neutral French oak.

Winemaker's Comments

The nose is wildly fragrant, with complex notes of orange blossoms, white peach, honeysuckle and jasmine.  The palate carries similar flavors with emphasis on stone fruits.  It sports a rich texture and bright acidity without excess weight or alcohol.  Wine can be powerful and vibrant simultaneously when made well, as The Choir demonstrates.  This balance makes this wine very versatile at the table.  Serve with foods that suggest sweetness without actually being sweet, such as roasted root vegetables, Indian-spiced chicken kebabs or even a holiday honey-glazed ham.
